Spiced rice. (perfect to serve with any curry meal)



Serves 6 easily

2 1/2 Cups basmati rice
1 handful each fresh coriander and parsley, roughly chopped
1/2 Cup dry roasted peanuts ( unsalted ), chopped into bits
1/2 Cup walnut kernals, chopped into bits
1/2 Cup cashews
1 Generous TBS Tumeric
plenty of Salt and Pepper

Preheat oven to 200° or 180° fan forced.

Spray a large baking dish generously with oil.

Cook rice until almost ready, drain and rinse under very hot water then fluff up until dry. Transfer to baking dish. Mix through remaining ingredients well. Cover with foil and bake 20 minutes then stir around, recover and bake further 15 minutes.

Serve with curry of choice.
