Cheesymite Scrolls

Makes 14 -16 Scrolls

 

 

 

Ingredients

  •  3 Cups Self Raising Flour
  • 1 Pinch Salt
  • ½ Teaspoon of Bicarb Soda
  • 80grams Butter
  • 4 Tablespoons Vegemite
  • 200g Grated Cheese
  • Milk
  • ¼ Cup Castor Sugar (optional)
  • Extra cheese or egg for top.

 

 Method

  1. Preheat oven to 200°C
  2. Sift Flour, salt, bicarb & (sugar) into a bowl.
  3. Cut butter into small cubes, use hands to rub butter through the dry ingredients. Work through thoroughly
  4. Gradually stir in enough milk to create a dough consistency. Don’t over-wet the mix.
  5. Turn the dough out onto a floured surface, flour hands and knead gently to finish combining ingredients.
  6. Create a thick roll with the dough, and then roll out with a rolling-pin into a rectangle roughly 50 x 20cm
  7. Spread the vegemite thinly to cover the dough
  8. Sprinkle cheese to cover the dough
  9. Roll up the dough from the long side to form a long roll.
  10. Cut 4 – 5 cm slices from the roll and place them reasonably close together, cut side up on a greased baking tray
  11. Either sprinkle the top of each with more cheese, or brush with beaten egg
  12. Bake in preheated oven for 15 – 20 minutes, or until cooked and golden.

 

Note: Works with or without the sugar in the dough, the sugar just takes the slight bitterness out of the dough. My kids can’t tell the difference but I can.
