White Christmas
Makes about 25 pieces.
Ingredients
- 30g (2 cups) puffed brown rice
- 90g desiccated coconut
- 160g dried cranberries
- 100g green glace cherries, halved
- 200g glace apricots, coarsely chopped
- 1 cup powdered milk
- 1 1/2 tsp vanilla extract
- 250g vegetable shortening
Method
- Place all ingredients except the shortening in a large bowl and stir well.
- Melt the shortening in the microwave or a saucepan over low heat and stir into rice mixture. Press into a lightly greased19cm square tin lined with plastic wrap.
- Cover and refrigerate until set. Remove from tin and cut into squares. Store, refrigerated, in an airtight container.
