White Christmas

 Makes about 25 pieces.

 

 

 

Ingredients

  • 30g (2 cups) puffed brown rice
  • 90g desiccated coconut
  • 160g dried cranberries
  • 100g green glace cherries, halved
  • 200g glace apricots, coarsely chopped
  • 1 cup powdered milk
  • 1 1/2 tsp vanilla extract
  • 250g vegetable shortening

 

Method

  1. Place all ingredients except the shortening in a large bowl and stir well.
  2. Melt the shortening in the microwave or a saucepan over low heat and stir into rice mixture. Press into a lightly greased19cm square tin lined with plastic wrap.
  3. Cover and refrigerate until set. Remove from tin and cut into squares. Store, refrigerated, in an airtight container.
