Thai Tofu Salad
Ingredients
500g firm tofu, thikly sliced
2 tblsp reduced salt soy sauce
2 tblsp sweet chilli sauce
canola oil spray
1/4 chinese cabbage , shredded
3 spring onions, sliced
1 med carrot, julienned
1 celery stick, julienned
1/2 white radish, julienned
1 large red chilli, seeded, thinly sliced
1/2 cup fresh corriander
1/2 cup fresh mint
2 tblsp fish sauce
2 tblsp grated palm sugar
2 tblsp lime juice
2 tblsp fried asian shallots
Method
Marinade tofu in soy and sweet chilli sauces for 30 mins.
Cook tofu in fry pan or chargrill on medium heat until browned and heated through.
Combine, cabbage, spring onions, carrot, radish,celery, chilli, corrinaderand mint in a bowl.
Whisk together, fish sauce,sugar and lime juice. pour over and combine with salad.
Arrange tofu on the salad and sprinkle with asian shallots.
Serve with grainy bread.
