Roast Potato Salad

 

 

 

Ingredients

  • 3  large potatos
  • 1  large sweet potato
  • 4  rashes bacon
  • ¾ cup sour cream
  • ¾ cup mayonaise
  • 1 tablespoon whole grain mustard
  • Olive oil
  • Salt & pepper
  • Chives finely chopped

 

Method

  1. Peel and cut potato and swet potato into large squares appox 3 cm. arrange on a baking tray and drizzle with olive oil, and sprinkle with salt.
  2. Bake in a 200c oven approx. 40 minutes or until cooked
  3. Fry bacon until cooked and chop roughly
  4. Transfer potato’s and bacon into a salad bowl
  5. Mix sour cream, mayonaise, mustard, chives, salt and pepper together.
  6. Mix through warm potato.
  7. Serve warm or chilled.
