Lentil Patties

 

 

 

Ingredients

  • 250g potatoes, peeled, chopped
  • 250g Sweet potato, peeled, chopped
  • 1 cup peas
  • 400g can of lentils, drained
  • 3 spring onions
  • 1tsp ground cumin
  • 1tsp ground corriander
  • 1tblsp sweet chilli sauce
  • 2 tblsp corriander, chopped
  • 1 egg white
  • 1 cup wholegrain breadcrumbs
  • 1tblsp sesame seeds
  • olive oil spray

 

Method

  1. Preheat oven to 200°C
  2. Cook potato and sweet potato in large pot of boiling water until soft. Mash
  3. Put mash in large bowl with peas, lentils spring onions, cumin, coriander,chilli sauce, fresh coriander and egg white.
  4. Mix with hands until well combined.
  5. Shape into 6 patties and roll in breadcrumbs and sesame seeds.
  6. Place on baking tray and spray with olive oil.
  7. Bake for 30-40 mins or until crisp.
