Honey & Sultana Cookies


 
 
Ingredients
 
  • 1 cup plain flour
  • 1 cup rolled oats
  • ½ cup firmly packed brown sugar
  • ¾ cup sultanas
  • 125g butter, chopped
  • 2 tablespoons honey
  • 1 teaspoon bicarbonate soda
  • 1½ tablespoons boiling water
 

Method

 
  1. Preheat oven 150°C
  2. Line baking trays with paper.
  3. Combine flour, oats, sugar and sultanas and mix well.
  4. Place butter and honey into a saucepan and melt over a low heat.  Remove from heat once melted and stir in the bicarb soda and water.
  5. Make a well in dry ingredients and pour in the honey mixture.  Mix well with a wooden spoon.
  6. Get a heaped tablespoon of the mixture and roll into a ball.  Repeat until the mixture is all used.
  7. Place them onto lined trays approx. 5cm apart and flatten slightly with the back of your spoon.
  8. Bake in the oven for 15-20 minutes or until biscuits are golden in colour. Note:  If using 2 shelves in the oven, swap the trays when they are halfway through their cooking time.
  9. Allow biscuits to stand for about 5 minutes and then transfer to a cooling rack.
