Dairy & Egg Free Banana Cake:

 

 

 

  

Ingredients

Cake

  • 2 cups Plain Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 3/4 cup Brown Sugar
  • 3-4 medium Bananas, mashed
  • 1/2 cup Oil
  • 1/2 cup Milk Alternative, (soy or rice)

 

Method

  1. Preheat oven to 180
  2. Lightly grease 2 x 20cm sandwich tins (i used loaf tin)
  3. Sift flour, baking powder and baking soda, add brown sugar and mix.
  4. Mix Banana, oil & milk.
  5. Add liquid ingredients to dry ingredients.
  6. Stir until just moistened.
  7. Bake 20-25 Mins.
  8. When cool. sandwich with Chocolate Mock Cream, and Sliced Bananas.
  9. Ice top or dust with icing sugar.


Mock Chocolate Cream

  • 2 tbsp Cornflower or arrowroot
  • 1 cup milk alternative (soy or rice)
  • 100g dairy free margarine
  • 5 tbsp Icing Sugar


Method

  1. Mix cornflour with a little cold milk.
  2. Heat remaining milk.
  3. Combine a little warm milk with the cornflour mixture, return to pan 
  4. until thick.  Allow to cool.
  5. Cream margarine with sifted icing sugar. beat until white & fluffy.
  6. Add cooled sauce slowly, beating continuously.
  7. Flavour as desired, eg, vanilla essence, lemn or organge zest etc.
