Creamy Mexican Bake

 Serves 4

 

 

 

Ingredients

  • 350g lean beef mince
  • 2 tsp oil
  • 1 clove garlic, crushed
  • 125g can mixed beans, drained
  • 400g can chopped tomatoes
  • 2 tbsp tomato paste
  • 1 red chilli, chopped (optional)
  • 1 tsp cumin
  • ½ tsp cinnamon
  • ¾ cup polenta
  • ½ cup boiling water
  • 375mL CARNATION Light & Creamy Evaporated Milk
  • 1 egg
  • ¾ cup light tasty cheese


Method

  1. Preheat oven to 200°C.
  2. Brown beef in pan with oil and garlic. 
  3. Add next 6 ingredients, stir until mixture boils, simmer 15 minutes.
  4. Spoon into four, 1 cup (250mL) capacity ovenproof  bowls.
  5. Combine polenta with boiling water in large bowl, add remaining ingredients, beat to combine, stand 10 minutes.
  6. Spoon mixture evenly over beef, bake 15 - 20 minutes, until golden brown and set.
