Chocolate Souffle'

Serves 6

 

 

 

Ingredients

  • 250 grams Dark Chocolate, broken into small pieces
  • 1 cup thickened cream
  • 6 eggs, seperated
  • 1 cup caster sugar
  • 1/4 cup plain flour
  • icing sugar, optional

 

Method

  1. Place the dark chocolate and half of the cream in a heatproof bowl, sit bowl over a saucepan of simmering water.  Heat stirring constantly, until chocolate is melted and mixture is smooth, remove bowl from heat and set aside to slightly cool.
  2. Place 6 egg yolks and caster sugar into a clean mixing bowl.  Beat until thick , gradually add flour and remaining cream, beating until combined.
  3. transfer egg yolk mixture to a saucepan, cook over medium heat, stirring constantly for 5 minutes or until mixture thickens.  Remove from heat and stir in chocolate mixture.
  4. Place egg whites into a dry clean mixing bowl, beat until stiff peaks can be formed.  Fold egg whites into chocolate mixture.
  5. Divide mixture evenly between six,buttered and sugared one cup souffle' dishes or ovenproof cups.  Bake in a pre-heated 180° oven for 25 minutes or until souffles' are puffed.  Dust with icing sugar if desired and serve immediately.
