Method
Mix rice bubbles, icing sugar, coconut and cocoa into a large mixing bowl.
In a small saucepan place copha and melt over a low heat. Allow to cool slightly before adding the rice bubble mixture. Stir until well combined.
Spoon into patty papers and place in the fridge until firm.
**For a fun variation add ½ cup of mini marshmallows**
