Apple and Spice Biscuits

 

 

 

 

 

Ingredients

  •  1 ¼ cups firmly packed brown sugar
  • 2 ½ cups self raising flour
  • 3 cups rice bubbles, crushed to equal 1 cup
  • 1/3 cup margarine
  • ¼ cup apple puree
  • ¼ cup honey
  • 1 tsp ground ginger
  • 2 tsps ground cinnamon
  • 2 egg whites, lightly beaten

 

Method

  1. Preheat oven to 180 degrees C

  2. Using an electric mixer, beat sugar and margarine until light and fluffy.

  3. Combine butter mixture with apple puree, honey and egg whites. Note: mixture may take on a curdled appearance.

  4. Sift flour and spices over mixture, add rice bubbles and mix well until combined.

  5. Roll level tablespoons of mixture into balls, place on lightly greased baking tray approx. 5cm apart and press down lightly with a fork.

  6. Bake in oven for approx. 8 minutes or until a light brown.

  7. Cool on wire cake racks and store in an air-tight container.
