Slow Cooked Lamb Shanks with Rosemary and Daikon Fries

 Slow Cooked Lamb Shanks with Rosemary and Daikon Fries

A great dish to put on in the morning and come home to a delicious meal

Serves 4

Ingredients:

4 organic lamb shanks

1 TBS Olive Oil

4 cups chicken stock

1 lemon juiced

Handful fresh rosemary

2 Garlic cloves crushed

½ tsp sea salt

Cracked pepper to taste

2 large daikon

 

Method:

·         Dress lamb shanks with garlic and rosemary and olive oil

·         Place in slow cooker on low

·         Add stock, sea salt, pepper and lemon

·         Cook for 8 hours whilst you are at work

·         When you arrive home place slow cooker on warm

·         Heat oven at 175 Celsius for about 40 mins.

·         Peel and chop daikon into fries, sprinkle with Olive Oil and Sea Salt and place on baking tray in oven for 40 mins

·         Remove lamb and fries from oven and enjoy
