Vegetarian Sausage Rolls

Ingredients:

1 cup stuffing Mix

2 large carrots grated

1 large onion chopped finely

1 capsicum finely chopped

2 x 310 gram tins creamed corn

2 tablespoons Soy Sauce

2 sheets puff pastry thawed

1 egg, lightly beaten ( for egg intollerant, use milk or water)

1 tablespoon sesame seeds (optional)

Directions:

Preheat oven to 200°C

combine first 6 ingredients well, cut pastry sheets in half lengthwise.  Spread the vege mixture lengthways along pastry sheets,brush edges with water and roll over to form a large sausage roll.

Cut into the desired sausage roll size, place on a lightly greased oven tray, brush with the egg and sprinkle with sesame seeds.

Bake in preheated oven for 20-25 minutes or until golden brown.

These can be served hot, or cooled for the kids lunch boxes.
