Melt in your mouth Lamb Shank casserole
Ingredients
6 Large Lamb Shanks
2 Medium Red Onions, roughly chopped
3 Tomatoes, roughly chopped
2 Red Capsicums, roughly chopped
1 Yellow Capsicum, roughly chopped
1 Green Capsicum, roughly chopped
1 Long red Chilli, chopped finely
3 TBS chopped fresh Oregano
3 TBS chopped fresh Parsley
3 tsp Sweet Paprika
4 tsp Ground Cumin
2 tsp Ground Coriander seeds
3 Cloves Garlic, crushed
Salt and Pepper to taste
Method
- Put the chopped capsicums, tomatoes, onions in a large slow cooker.
- Combine the spices, garlic, chilli and herbs in a large bowl with about ¼ cup Olive oil. Add lamb and completely coat meat in the sauce. Cook lamb in batches until well browned and place into the slow cooker.
- Cook on low for approximately 8 hours until well cooked and lamb is falling from the bone.
- Serve with creamy polenta or creamy mashed potatoes with the sauce drizzled over and fresh bread to mop up the sauces.
