Curried Lamb Shanks

 Serves 6

 

 

Ingredients

  • 1 Tablespoon oil
  • 6 Lamb Shanks
  • 1 large onion, chopped
  • 1/2 cup Rogan Josh Curry Paste
  • 400 grams diced tomatoes
  • 1 Beef stock cube
  • Yogurt and Coriander for serving

 

Method

1. Place a heavy based frypan over high heat, add oil and seal lamb shanks turning frequently for approx. 2 minutes.

2. In a large slowcooker add Onion and Lamb Shanks

3. Combine Tomatoes, Curry Paste and Stock Cube, add to the Slow Cooker.

4. Turn onto Automatic for approx. 6 - 7 hours.

5. Garnish with Yoghurt and Coriander.
